I have bad experiences with TeflonI have tried all kinds of pans from Teflon to cast iron. I have bad experiences with Teflon. Even the very expensive ones eventually break down. I have wasted a lot of money on them over the years. Now I'm reading about teflons terrible effects on the environment as well as the unhealthy effects on the food prepared in a Teflon pan. My cast iron is well seasoned so it is almost completely non stick and I love it. But this pan with its copper core is perfect. The first time I used it I consulted UTUBE for a demonstration, followed the recommended procedures, and the Persian Rice turned out perfectly. This is a large 13" pan, but not too heavy to flip it upside down so the crusty bottom of the rice is on top for a dramatic presentation. And the pan cleaned up beautifully. (The recipe is from the New York Times - David Tanis's Persian Jeweled Rice) 53 years in and it's great.I have had this pan for 3 years now and am very happy with it. It heats evenly and consistently, is easy to clean, and takes punishment a lot of other pans can't. I like that it's dishwasher safe and after years of using it there is no noticeable wear from putting it in the dishwasher. With stuck on food it doesn't always come off from the dishwasher but even the worst will come off with a little Bar Keeper's Friend.The only "downside" is that if you aren't ready for how fast it transfers heat it might burn to the pan. I would suggest starting at a lower heat than most pans and increasing as needed. 5Fantastic panThis is a pricy pan, but certainly worth the cost. I learned a few great techniques just to make sure I don't ruin the pan, so it's actually made me a better cook. I use it about 3-5 times a week and it's taken everything I can throw at it. I've started using Bar Keeper's Friend every couple weeks to keep it shiny and it works like a charm.Bottom line, the pan heats quickly and evenly, cooks like a champ, won't stick if you just try to learn how to use it (Liedenfrost effect, ftw), and seems to be a worthy investment so far. Looking forward to giving this one to my kids in 20 years. 5Professional Grade PanYou can be tempted to buy the same kind of pan for a lot less. In fact over a hundred dollars less in some places. However, if you want the best that will out live you and to whomever you hand it down to then go for the copper clad All-Clad pan. This is what the chef's use and for good reason. Heat distribution is very good due to the copper clad center. The handle is attached to last for ever so no loose screws or rivet joints to come loose in a couple of years. Cleaning is easy and so far I never had to scour (which is not recommended) the pan to remove anything that was stuck. Read the instructions on how to use the pan as like anything you can destroy anything if it is abused.Bottom line is you only need a few pots and pans to do most of your cooking so get the best and never have to worry about these items again in the future. 5How can you NOT like All-Clad?I swear by all clad. I have a few good pieces of cast iron that I used daily for years. I bought my mother a couple of pots from all clad sight unseen for Xmas. I was impressed by the weight and she raved about easy cleaning. The pots that these replaced were some 50+ year old revere ware with the copper plated bottoms that the bakalite handles were long broken away.Anyhow I bought a 10 inch SS pan and fell in love with it. I now have a full set bought one piece at a time. This 8 copper pan is heavier than my 10 SS pan but very easy to handle. I also have the 12 copper core fry pan that is a little heavy to lift and shake to flip food around but is great to pan sear steaks.But my favorite copper core is my 1.5 qt sauce pan. I think that s where they shine the best because weight is not as important because it sits and usually not being flinged around like skillets. I love the rolled lips on the copper core over the straight sides on the standard SS pots.I truly believe this stuff is better at almost everything then cast iron. I still break out the cast iron on occasion but it s so easy to handle and Cooks so evenly, recovers so fast, I don t see the advantage of cast iron most times. Btw, been using an induction stove for about a year now, WILL NEVER GO BACK to standard electric range. Acts just like gas as for instant heat and instant adjustments but several times hotter then gas. All clad works great with induction too.I know this stuff is pricy, that s why I bought one piece at a time. But it s lifetime cookware just as is the cast iron. Your kids will be fighting over it when your gone.As far as sticking, I ve read a lot of people complaining how everything sticks to stainless and how hard it is to clean. First off i suspect these complaints are coming from people that have never used anything but WallyMart Teflon pans. These are professional grade pans. You have to know how to cook in them. Heat the dry pan for several minutes. THEN add a little butter, oil or other fat. Heat to just the point you see whispers of smoke, then add your protein. I m not talking deep frying, I m talking just enough fat to coat the bottom. Nothing will stick. I fried an egg with a 1/2 teaspoon oil and it slid right out of the pan when done. The trick is to let the food tell you when it s ready, don t rush it. If it s stuck, it s not ready.Well that s my review in something I really believe in. 5This is a well made good looking durable fry panPros:This is a well made good looking durable fry pan. It should remain so for many years.It cooks well heats evenly.It cleans at least as well as comparable stainless steel fry pans.It is relatively non-reactive with most acidic (e.g. tomato or citrus) and alkaline foods (e.g. beans or lentils).After cooking the minor interior pitting from salts in food clean rapidly and with little effort with Bar Keepers Friend followed by detergent and rinse. Then it shines with a lite polishing from paper towel with tiny amount of Crisbee or Crisco.Cons:ExpensiveI have not yet been able to find a lid by All-Clad for it.Food sticks when cooking with 6110 SS more easily than with All-Clad 6212 SS Copper Core and 6110 SS Fry pan is a little more stubborn to remove stuck foods like eggs. My well seasoned cast iron fry pan is much more non-stick, but does not heat as evenly near the periphery of the pan.Non-stick fry pans perform better frying or especially scrambling eggs but are tremendously less durable.Conclusion:Would purchase again, though will probably never need to.Would recommend it to family & friends.I am awaiting order for The chef pan(All-Clad 6412 SS Copper Core 5-Ply Bonded , 12-Inch) 4Just the BestIf you know how to cook on stainless steel this is an exceptional fry pan. If you haven t mastered how to cook on stainless steel this pan, and any other stainless fry pan will be a disaster.I have a complete set of Cuisinart three-ply stainless steel pans and have owned an All-Clad Tri-ply fry pan. This Copper Core pan is by far the best I have ever used. It is in a league by itself. The All-Clad Tri-Ply is better than the Cuisinart, but this pan is best by a wide margin. The other pans work fine in non- fry pan situations.The pan heats and cools quickly.It transfers heat to the edge of the pan very efficiently. This is particularly important with a 12 inch pan because much of the pan isn t in direct contact with the heat source. At cooking temperatures the measured temperature at the edge of the pan has been within 30 degrees of the temperature at the center.The handle is different from the All-Clad tri-clad handles and is very comfortable to me.Among other things I have cooked fried eggs, scrambled eggs, fish, pork, grilled cheese sandwiches and pancakes. All except the pork were completely non-stick and the pan just needed to be wiped out. The pork didn t stick, but left a few bits on the bottom. It was completely cleaned up by just deglazing the pan with a little water, and then just wiping the pan clean.The pan seldom needs to be washed.The pan needs to be seasoned and the only time I have cleaned it with Bar Keepers Helper was when Avocado oil left a sticky brown mess on the pan when using it to season the pan. Avocado oil doesn t seem to like to be heated to its smoking point. Crisco works best for me for seasoning the pan.I have only two complaints about this pan:1. It costs too much.2. It doesn t come with a lid.If you can live with the price and need a 12 inch pan, this is the one for you. 5I'm 46 and like my cast-ironOkay, I decided to upgrade my cookware. I'm 46 and like my cast-iron, I really expect this cookware to outlast me with just a little bit of care.Its amazing how just having the right cookware or cutlery can make cooking (which I enjoy) even more pleasurable. This time around, I decided to buy individual pieces, rather than a set and only get the pieces I wanted.Between Amazon & Williams Sonoma, and two purchase at Marshalls, I have what I wanted. I went all copper core 5 ply over the alternatives. Its more expensive, but as I don't intend to replace these, I also didn't want to say "I wish I had".This particular piece (a beautiful 12 inch fry pan) - Great size and wonderful heating properties. Some people complain about the lack of cover. I use a splatter guard for frying somethings, but otherwise don't find a need for a solid cover. Anything I would cook covered ends up going in the Saute pan. Guess I just use my fry pan for frying. 5Pretty out of the box - that will end after first usefirst use - cooked some eggs with little butter. Pan stained. First use. $150 pan that is this easy to stain - ridiculous. Didn't expect it to stay perfect, but yikes. I bought a 15 piece all clad set to replace my old Cephalon pans - apparently the old cephalon pans are a health risk to use - why Cephalon only sells non-stick ware now. The 15 piece set did not included an 8" pan. Purchased it separately. After the $150 all clad 8" pan stained, I went to Target and purchased a $25 - 10 in nonstick pan - it works great. Shame on me for wasting my money. Don't make the same mistake. They are pretty out of the box - but that will be short lived. 1Worth Every (Copper) PennyWorth the money.I was skeptical that an expensive pan would make this much difference, as I have been "cooking" on cheaper pans for the last few years. This pan is worth every penny, and changes the way I think about stove-top cooking. Other than my cast iron, this is my new favorite kitchen pan. I could survive in the kitchen with this and the cast iron alone.First, the pan itself is a thing of beauty. Wonderfully well-built, smart design, elegant, shiny and solid. Some people may think it's a bit heavy, but to me, I love it's weight. It's like a heavy chef knife- wielded properly, the weight allows the pan to do the work for you.Food cooks so evenly on this pan it's amazing. The copper core allows the pan to get hot extremely quickly, and to cook food through evenly in much less time than cheap pans. (You can do shrimp on this pan in about 45 seconds).Easy to clean, and I found non issue with even omelettes sticking- obviously you have to use oil or butter. But I figure I have eaten enough teflon in my lifetime.Less not more. Buy this pan and throw away those 3 or 4 crappy pans that are cluttering up your kitchen.Only negative is the price, but it's worth it. 5
