It has arrived alas is concave thus oil pools at ...It has arrived alas is concave thus oil pools at the sides of the pan. Food in the middle, therefore, gets no oil. Returning. 2Defective pans on sale.Received the pan and noticed it had a very tiny wobble when I placed it on my glass top stove. At first I thought maybe it was because the handle was offsetting the balance of the pan, but even after putting a full wine bottle on it you could see that the very front of the bottom of the pan was not resting on the surface. I tested it on my stove, counter, table, and floor.I had also bought two other similar but CHEAP frying pans and they both sat perfectly flat on all surfaces. I figured maybe this AllClad pan was just defective, so I had Amazon replace it. Unfortunately, the replacement pan ALSO wouldn't sit flat! Must be why this pan with lid combo is on sale for less than the pan by itself (item 41126 vs item 4112). They're luring you in with a cheaper price, but these seem to have minor defects that they hope people won't catch.After all the great praises this brand has received and a $100 price, I expected perfection. Be wary of this one. 1A good investment.I have struggled to get a good, biggish skillet that would last. After trying green pans (which never really are non-stick) and regular non-stick, I must have wasted hundreds of dollars. My daughter recommended All-Clad as a pan that will last. I fried up a bunch of onions for an Indian dish. Even with oil, I had a dark brown crust on the pan. But I soaked it and used a non-scratch pad with regular mild dish soap and it all came off. And, it comes with a good fitting lid. And, it sits flat on the glass surface of this stove. I believe this will last me a very long time. A good investment. I did follow their instructions to not overheat the pan - a good way to be sure you get good life out of a stainless steel frying pan. 4Better than my expectationsI just wished I had bought All-Clad much earlier. It has surpassed my wildest expectations (and I had high expectations). We have had zero problems with sticking. We have cooked naan with no or little oil and had no problems. Yesterday we cooked a 'dutch baby' using a recipe that begins the cooking process from a cold oven. The baby puffed up to incredible heights and released without any issues at all. This is truly some awesome cookware. The quality is amazing. Cooked beef tenderloin for my wife for Valentine's Day and she just oohed and aahed of how they were cooked. Really remarkable stuff. After using it, it does not look like I just bought it but who cares. I bought it for cooking quality not looks. And oh how it cooks. Thanks All-Clad for supplying something that is such a joy to use. 5Even cooking and sticking isn't that badwith a little insight on when to place ingredients and when to turn them the pan usually doesn't get too grimy and as long as you got some hot oil and let the meat brown it doesn't stick bad. Food cooks beautifully in this pan and it distributes heat very evenly. If I burn a lot of liquids or something in the pan I just pour some vinegar in it while it is hot and scrape it up with spatula. Occasionally I use Bar Keepers friend to polish it back up. 5Simply the best stainless steel pan on the marketI have been cooking home meals for 15+ years, and have moved from non-stick to cast iron to stainless, and have used tons of varying products over the years, and All-Clad pans are by far the best Stainless Steel cooking products on the market in their class. (You can get a better chef's pan for $500 but that's a different class of pan)For the money, this all clad pan has been just amazing, it heats evenly, and everything we cook with it has turned out stellar due to the consistent heat that comes off the surface. The build quality is sublime, the lid fits almost hermetically, and the pan itself is just plain gorgeous. Ignore the low star reviews who say everything sticks, they obviously don't know how to cook with stainless and they will have the same results with the best stainless pan in the world. If you are familiar with cooking on stainless, and you don't want to spend half a G, this is the best pan out there. I also recommend buying these pans new, as they are very prone to scratches and used pans will not cook as well as a new one, and obviously never use metal anywhere near this thing. We will be buying much more All-Clad cookware to round out our stainless collection 5Very DisappointedFirst time this was used, pan heated on low, ( less than 2 on my electric range, I never heat fry pans past 2 unless using cast iron) the bottom warped as to make the pan unusable. Very poor quality control. My 20 year old All Clad 10 inch pan has never had this problem. I dragged out the trusty Brown and Sharpe micrometers and measured the thickness of both pans, the older pan is .103", and the new one is .072", quite a difference. Don't know if this one was just a stinker, or more likely the result of corporate cost cutting. Whatever the reason, it was returned for a refund. I did not feel like playing the game of sending me two or three more to find a good one, just to have it warp later on, which according to All Clad's warranty statement they do not cover warping. This is very disappointing as I wanted to reduce the level of use my old 12 inch cast iron pan gets, it's just too heavy loaded with food for these aging wrists to lift ( older pan with no helper handle), and I really wanted my monies to go to an American company that supported American jobs. Guess I will find a way to use the cast iron, or buy a new one with the helper handle. 2Great tool for the kitchenGreat tool for the kitchen. It takes a little more consideration and sometimes a little more elbow grease to clean it but it browns and cooks like a champ.Update August 22, 2017 -This has been the workhorse for a month of Hello Fresh or Blue Apron meals, three times a week, in recipes that routinely call for a lot of skillet work. The pan heats up pretty quickly and the heat is even over the entire cooking surface, it cools quickly when the temperature is reduced, even on our electric stove. The pan is responsive to inputs.It works best at medium temperatures, never above 5 on the dial, still sears and browns well, pan sauces work great, always leaves a nice fond. It IS a bit harder to clean up than nonstick. Proper technique keeps this easier to clean. However, you CAN burn the oil or material with bad technique - and this can be really hard to clean. Don't ask me how I know this. Several unfavorable reviews with pictures look like thoroughly burned oil and you'll want a sand blaster for these.I've gotten used to a little patina and not "as new" clean most of the time wit; Barkeep's Friend every few meals keeps things from building up. Or cook a tomato based sauce.A great tool for the kitchen. 5Poor warranty/customer service for a brand new panThis was my first try at an All-Clad pan to see if they were worth the hype (always listed as the #1 pot/pan to get pretty much regardless of who is making the list) and unfortunately came away disappointed. The item came with a 3" scratch along the outer portion of the lid in what appears to be a manufacturer defect. No problem i figure, i haven't used it and it comes with a lifetime warranty. Unfortunately after calling all-clad i was told that regardless of their "life-time warranty", their pans with lids are not a normal item and therefor can not be replaced if i sent it back in. I will call amazon and see if they can remedy it however this bodes poorly for a pan i was hoping to keep for a lifetime and wanted a warranty that actually meant something to back it up. 1Disappointed - This pan is not flat - oils pool around edgesAs other reviewers have pointed out, the bottom is not flat - at least not on mine. Therefore oils would pool around the outside edges of the pan leaving no oil in the center. I should have listened to the reviews, but I figured, "This is All Clad, it's supposed to be awesome so it must have been a fluke." Sadly I was disappointed to learn that it was not a fluke, and I am returning this item. For the price, something so simple as this should not be an issue. There are many other less pricey brands that can manage to make a flat bottom fry pan. Get your act together All Clad, or drastically reduce your prices. This was my first All Clad purchase. Not sure if I want to try again. Sigh, I was really looking forward to seeing what all the hype was about and enjoying a really great kitchen tool. 2
