Plastic rollersGave only 4 stars because the rollers are not wood. They are a very hard plastic and I hope they last the next 20 plus years. Other then that, the machine worked as you'd expect. I made a batch of cavatelli that yielded about 3 pounds of yummy goodness! 4Disappointed in mis-represented productOrdered as a birthday present for my girlfriend, and she was very excited when she unwrapped it... then we opened it to discover a cheapo with plastic rollers. Going back to Amazon, and will be buying a real old one with wood rollers on eBay instead. 1Was very dissatisfied with itWhen I received it I was very disappointed it look like it was dirty and someone had already used it I didn t appreciate that 1Makes a super 'Mini-Gnocchi' noodle that never met a sauce it didn't like!I have more fun with this thing! It's worked well for me, once I got my dough dry enough! It needs to be much stiffer than you'd normally use to roll-out into sheets. I processed a whole batch of dough, lightly dusted with semolina flour; lightly froze the 1/2-sheet pan then, using 'snack' size zip bags, I filled those and stuffed them into a larger Zip-loc bag for the freezer.The Snack size makes 1 hearty serving-maybe enough for 2. 5Poor qualityThis is a very poorly constructed cavatelli maker - The nut to hold the crank on flies off all the time, even after you tighten it. It will make maybe 20% cavatelli noodles and the rest that it cranks out are just weird gnocchi looking blobs. It's not consistent, and a really big pain to use. I made ricotta cavatelli with it and it worked just fine. Many of the negative reviews seem to be related to people receiving bad units which I would have returned had I received a defective unit. Other negative reviews seem to me are more related to people not having experience with making pasta and trying to learn how to use the machine. Your dough needs to be firm and not sticky or it won't work. I also liberally dusted the pasta strips before I fed them into the machine. As for the comments about the rollers not being wood, I can't say where it makes any difference to me. In fact the plastic may actually be more durable in the long run.I can't speak to the long term durability of this but for about $26 you get what you pay for. My only complaint so far (which isn't really the machines fault, caveat emptor to me) is that my kitchen counters are too thick for the clamp to work. I had to clamp the unit to my table and work there. Had I checked this specification before ordering I would have known this, but probably would have bought it anyway. My advice is to get this unit if you want to make cavatelli, if you get a defective unit return it for a good one, and learn the nuances of pasta making and enjoy it. Buon appetito! 4Worth the $$$I just received it, so I have only used it once. The reason I went with this is because I really want the Kitchenaid Pasta Press/Extruder, but it is too expensive, plus I keep reading that the ring inside of it breaks all the time. So, I decided to make gavadeels! I will say first off, I do not care for the recipe (the basic recipe) very much at all...it tastes like nothing. I have made pasta, ravioli, etc. many times, with lots of flavor, so I know that it is the recipe, but a not-so-great recipe included is not a big deal to me. I will just use a different one next time. It works pretty well, but it seemed like I needed to run almost half of it through again because almost every other piece came out as just a little square chunk. I didn't really mind because they are so easy & quick to make, however, it shouldn't do that. It seemed to work better, also, when I rolled it into a rope instead of rolling it out & cutting strips. Maybe it's just a trial & error thing? The lines do go the wrong way for cavatelli, so they do also look like worms a bit, but if you can get past that, you'll be ok. Overall, for $35, not a bad purchase...quick & easy to make...but try a different recipe...maybe with eggs or ricotta? 4I'm Happy With MineIt was delivered and I immediately opened it and took it apart. Got out a Kitchen Aide attachment I rarely use and studied how to make it work on my mixerNext day after 4-5 hours or so I had it turning on my electric mixerI'm very happy with this product. 5As expected.Cavatelli maker arrived today. The fit and finish, which is generally good, is about as I expected based upon the reviews that I had read. I do find that the nut that holds the handle seems to work itself loose. I may add a washer to the assembly as another reviewer suggested. I wanted to run some throw-away dough through the machine in order to eliminate any possible manufacturing residue, so I mixed some semolina flour with water to make a quite stiff dough. I then rolled it out to about a quarter inch thickness and cut three-quarter inch strips to put through the machine. Based on other reviews, my primary concern was that the dough was neither too soft nor too sticky. I found, however, that the dough was too stiff, and instead of being shaped correctly, the machine simply cut the strips into rectangles, but did not roll the pieces of dough, or put the ridges on them. I kneaded a little water into the dough so it would be slightly softer but not sticky. The results were much better, and only produced a few "blanks." It is obvious that this machine will be much quicker and easier than using my old gnocchi board. The success will depend on the texture of the dough. Overall, I am pleased with the product and look forward to trying it with my regular cavatelli recipe.UPDATE:I made cavatelli using my regular recipe today (1 pound ricotta, 3 eggs, pinch of salt and about 4 cups of tipo 00 flour, mix, knead well and let rest covered for 30 minutes). I found that I had to flour the strips of dough pretty liberally to keep them from sticking, but the machine worked well. I actually ended up doubling the recipe and making an enormous quantity of cavatelli in a relatively short period of time. My friends had a blast helping, and the end result was fabulous. I would give this product five stars if the nut that holds on the handle didn't work loose, and if it was a bit easier to clean. Overall, though, it is a good product and I would recommend it to anyone who makes cavatelli on a regular basis, or wants to make large quantities at one time. 4Solid look and feel but the wood rollers are fixed and not adjustableI just received the machine Friday 26, October 2012. The unit was not newly packed and I was not the first to unpack or handle the unit. Lots of finger prints on the shiny metal. Nevertheless, the unit is very handsome and appears well made. The rollers do not appear to be adjustable with regard, the vertical distance between the rollers...that dimension is fixed.REGARDING GNOCCHI: I make potato gnocchi dough with 00 flour and push the dough through a large pastry bag with a 3/4 inch hole producing a rope of dough that will not go through the cucinpro and resemble classic potato gnocchi.The shaft that turns the machine fits the chuck of my cordless drill and leaves my hands free to work...Fool around with your dough and you will have a pasta factory in your kitchen cranking out perfect pasta.I have not tried all purpose flour. I am experimenting with pure semolina and durum flours as I enjoy the mouth feel these flours create.Time to get some sleep...too much fooling with my new toy.Buy this thing now if you have a good sense for the feel of pasta doughs or enjoy learning such things. 5
