Professional quality equipment I bought this as a gift for my chef boyfriend. He has been using it for months making soups and purees of all kinds and loves it. In fact, I found out later that it's the same exact chinois that they use at his restaurant. High-quality professional equipment. I know a few other reviewers found it too big to comfortably use, but he said he would not want anything smaller. He's very very happy with it... chef approved! 5Great for yogurt and bone broth I use this at least once a week. I use this mainly for straining homemade yogurt and occasionally chicken bone broth.This is a very fine strainer. Very little yogurt strains through with the whey. I turn one gallon of milk into yogurt. It takes filling this strainer up twice for the entire batch. I usually let it strain 1/4 of the way down which takes about 45-60 minutes if the yogurt is straight out of the warming oven. This produces approx 2.5-3 quarts of yogurt. Reducing it too much produces dry thick yogurt.Straining bone broth is a breeze. It ensures all small bones are caught. Its large enough to strain the bones from a whole chicken.Pros:-it's large, thus reducing your straining time-dishwasher safe-handles high heat well-sturdy- the wires that protect the strainer work wellCons:-It's large. It may be difficult to store depending on your kitchen.- the size makes it really hard to strain by hanging in even a large stockpot. It does stand and lean while straining ok though.It can be difficult to clean the fine mesh. I use a sink sprayer and then put it in the dishwasher.-the price is a bit highOverall this is a great purchase and I am extremely pleased with the product. I can't imagine making yogurt without it. 5Uber durable and very fine Just thought I'd point out that this thing is huge! Be prepared to cordon off extra space somewhere to store it. The payoff on the other hand is worthwhile. I've been using it twice a week (mostly for nut milk w/ a pestle) for a couple of months and I'm confident that it will last a lifetime of normal use. I know, pretty bold statement, but I kid not. Short of driving over it with a Chevy van, I can't see anything that could make a notable dent in this...at least not while affecting its performance.The mesh is indeed very fine. It will strain most of the fine ground "almond flour" from nut milk. Sorry, this is the most quantitative measurement I can offer. Moreover, the mesh is very stiff, facilitating hard, repeated pestle use. The cage is of heavy gauge stainless steel to protect the not-so-fragile mesh cone.Shopping for other higher-end chinoises (sp?), $70 is at the lower end of the spectrum - possibly due to the use of plastic instead of stainless, but the guts are essentially the same as other single mesh strainers. With that said, I'd consider this a very good value. 5Efficient, clear stock Works GREAT for straining chicken stock. No dealing w/ cheesecloth or flat/round bottom strainers. The tightness mesh & narrow cone of the strainer extracts more stock, more efficiently, without increasing cloudiness compared to cheesecloth. Balances well on the side of the stock storage container. Would buy it again in a heartbeat. 5Worth the price I bought this to strain homemade yogurt for Greek yogurt & labneh. The first batch it worked quite well but subsequent batches the curd goes through the mesh. I want the really fine creamy texture & don't want to do much to increase the curd size. So back to cheesecloth. I did make a large batch of chicken stock and it strained beautifully - crystal clear stock. It also works well for sauces and custards. So although the yogurt was a bit disappointing, I'm still very pleased with this for all the other uses of a fine mesh strainer. 4Perfect accessory for a super-blender If you got or bought a nice blender (VItamix, Blendtec, etc) you should really get this to strain your soups so they are perfectly smooth. I made a ginger, butternut and carrot soup and it thought it was perfectly smooth, but after straining through this, I discovered a small mat of tiny fibers at the bottom.If you get this, also get a 2 oz ladle to help push the liquid through the chinois. 5It does a great job straining homemade chicken broth This strainer has been a a game changer for me when making soups. It does a great job straining homemade chicken broth. Wish I bought this years ago! It is quite large though, so storage could be an issue for some. I keep mine on the top shelf in my pantry. 5Excellent, high quality Excellent, high quality, sturdy chinoise with a very fine mesh. Strong enough to stand up to making veal stock with large bones, and fine enough to produce beautiful, translucent, jewel-toned jellies. The two hooks give it a welcome stability when wrestling to transfer the contents of bulky stock pots. Its size can present a challenge finding a suitable container to catch the strained liquids as noted by other reviewers. After conducting some research, I purchased a round, polycarbonate Cambro 8 qt container with lid. With an 8.5" inner diameter and nearly 11" in height, this container comfortably and stably accommodates the Matfer chinoise. The chinoise can be stored in the container to save cabinet space. After a year the Matfer still looks like new. It's so beautiful, it practically beckons you to take on any recipe The French Laundry can dish out. My next project with this bad boy will be straining herb-infused oils. Love it. Definitely worth the investment. 5Not bad, could be better Besides the screen having a slight deformity in one spot, it's a good strainer. The area on the screen that is deformed did allow some stuff to get through that we didn't want to. 4Proper tools proper job. Mafter is a French brand that makes and distributes a lot of excellent cookware. Their products aren't cheap, but they are worth it.I've used a bunch of chinois at work and own the Mafter and another cheaper non-name stainless one for home use. Comparing the cheaper one to the Matfer is like comparing a Yugo to a Rolls Royce. The Mafter feels so good in your hands you end up just looking for an excuse to use it.I also found a mushroom-shaped pestle (at a local cookery store) that fits almost exactly into the bottom of the chinois (I've included a photo of it). If you can find one of these, buy it for it makes pressing the juice out of things super easy and works better than the "normal" pestle in a lot of cases. The closest thing I can see on Amazon to my mushroom-shaped pestle is one called Rosle Wooden Conical Pestle which I don't own, so can't vouch for it. 5
