Such a disappointmentI am extremely disappointed in quality off this product; stains of rust and heat discoloration on the bottom of the pan after just one month of use.Don't buy it, you ll regret it as well. 1DisappointingI have been wanting one of these for a long time and finally splurged. I could have done much better. I went with Calphalon because I have some non stick pans that are incredible. This pan cooked really well. I used it for Thanksgiving to make gravy (butter, flour, drippings and broth-nothing at all acidic). There is a ring around the pan. This is supposed to be stainless steel and a saucier. If it can't handle not staining with gravy I cannot imagine what it would look like with a harsher sauce. For almost $70 I expected a real stainless steel pan. I am very disappointed and unsure whether I will ever bother with Calphalon again. 2On its way to being my favorite pan!Just got it, used it immediately, and can tell I'm diving into a long lasting love affair with this little pot. We've recently tossed everything previously owned and replaced all with new stainless. We opted to abstain from the multi-piece cookware sets and put together exactly what we want piece-meal. Let me tell you it's been fun and the results have been wonderful, both visually and functionally. However, when we'd thought we were completed with our task we realized we had not replaced our 1 quart saucepan. Hence, we considered all options and determined this little fellow would suit our needs. We are very happy so far. NOTE: it does not come with a lid--a thing some might consider a hinderance. We rarely used a lid on our previous 1 qt saucepan anyway. Moreover, my wife has always used a plate to cover when boiling eggs--her primary use of a small saucepan--and enjoys the heated plate on which to serve her boiled egg. 5Makes a nice wok for one or two peopleThe pan's heating characteristics, finish etc are typical of Calphalon multi-ply pans. It's a very nice size and works great for stir fry. I have been using it as a wok when cooking for myself or two people. Plus it's versatile. You can deep fry some tofu, remove to a plate and pour out some of the oil, then continue to cook veggies and meat and combine all at the end. The handle, like some other products from this manufacturer, is a bit too skinny, but other than that no complaints. I have a 12" wok from Calphalon but this works somewhat better for me for small amounts. 5Defective, Poorly Made Product Waste of MoneyI purchased this product because I'd had good luck with Calphalon pots and pans in the past. My wife and I are both seasoned chefs. We know how to appropriately handle and use cookware. The first thing I noticed about this 2.5 quart Shallow Sauce Pan however, was it's lack of weight and heft on the bottom, which is almost as thin as the sides. Not a good sign because it can't store and focus heat where it belongs... on the bottom of the pan. The thinness of the bottom also makes it challenging to put any significant heat under the pan which is advertised as being good for browning and braises, etc. That said, the second time we used this pan, was to boil some sweet potatoes. There was plenty of water in the pan. The potatoes were afloat and yet, after we boiled the potatoes on medium heat, the surface of the stainless steel on the bottom revealed a small etched spot... surface damage, which exposes the aluminum. Our primary reason for buying a stainless steel pan is so that we don't have to cook on an aluminum surface. Now the pan is effectively nothing more than a paper weight. I can see from at least one other review that this identical problem has happened to other people and yet, Calphalon is still selling this poorly made product. Disgraceful Calphalon! BUYER BEWARE!!! Don't waste your time or money with this piece of junk! 13 Quart Chef's Pan bottom is almost 6 inchesIn case anyone was wondering, the 3 Quart Chef's Pan has a bottom diameter of 5.5" (the flat part). It's hard to find answers when sifting through the Q & A when there is no reference to which sized product is being answered. I needed a specific base diameter for my electric stove. 5So glad Amazon has this individuallyThird Calphalon item I got since I moved out. I saved up a while to get this knowing that it would last me a lifetime. At Bed Bath & Beyond, this pot is only available in a large box set with other pans. Since I already have a shallow 5 qt, and tall 8 qt, I needed an additional for pasta sauce etc, and was NOT going to spend $300+ for more pans that I don't need for. So glad Amazon has this individually, so I have the sizes and styles I needed catered to my needs. Did I mention I have a small kitchen? They stack and save space in my tiny cabinet. 5Surface Etched on First UseOn first use, the surface of the pan was ruined by etching, shown in the photo as dark spots.I have used Calphalon for many years and never had this issue before. In fact, the surface always impressed me, coming out perfect with minimal effort, no food sticking, looking brand new year after year of heavy use. With this saucepan, however, after one use, I found the surface had been compromised. I was making candied citrus peel by boiling peel in salted water baths to remove the bitterness, finally in a sugar syrup. Okay, there was acid and salt together, but only the amount you would expect to find in food in a kitchen.If the cookware has restrictions, the manufacturer should make it clear in the instructions what the thresholds are for pH and salinity. Especially at this price. Better yet to have cookware that is able to stand up to regular use.I love Amazon for making the return so easy. I don't have to deal with the manufacturer, the warranty, and the waste of time and effort dealing with customer "service." 2Extremely satisfied, exactly what I wantedbought it to boil water for tea etc usually just for 1. But accommodates 2-3 cups easily. It is used everyday and many times in a day too. Almost never gets put away because it is constantly in use. The sides and water heats up really evenly and doesn't splatter out when pouring the hot water into our mugs. Was so fed up of all the cheap SS pots I had to keep replacing over the years cos the handles came off and there were small holes in the sides where the handles were welded to. There are rivets on this too but it doesn't bother me. Didn't need a cover to go with the pot so this pot fits the bill. Have even heated up small amounts of curry and sauces in it too and it cleans like a dream after that. This is a nice sturdy pot and the handles do stay cool if you don't leave it on the burner for prolonged periods and the pot doesn't tip when empty either. I'm really loving it 5Really pleased with themI got these for Christmas and have been using them for the past 4 months. I switched to these from a nonstick set that had been scratched beyond safe use. I decided to try stainless to avoid having to replace my pans every few years, despite my reservations about ease of cleaning. So far, these have been great for cooking. Very even heating (similar to my Le Creuset pans) and boils water quickly. It seems to heat up faster and get hotter than my nonstick pans did, which required a little re-calibration on my part (and some burned rice!), but overall I love the way it cooks. Cleaning has been relatively simple. Haven't had any issues with staining yet, and any really stubborn food has been easy to get off with some Brillo (or in the case of some very stubborn scalded milk, by boiling some baking soda with water in the pan). Definitely worth all the benefits over non-stick and hopefully will keep these pans for many years! This size is perfect for those tasks when you don't want to dirty a big pan and it is super cute. 5
