Nice pan but bottom not flat Nice pan. It heated evenly but it appears the interior bottom is not totally flat. I noticed it when I poured about 2 tbs. of olive oil in the center and the olive oil distributed evenly towards the sides of the pan from the center. I guess I will have to use slightly more oil than anticipated. For that, I took off one star. 4cleans up easily with --IF you even need to scrub hard The top review here is from 2003. 12 years later, I bought this because I was tired of teflon that goes downhill within a year and you just throw it out. I was very skeptical. That skepticism is gone after 2 months of use of this pan. I almost spent 8 TIMES as much on a "luxury" pan. Don't bother!!This pan is really awesome-- it cooks evenly, cleans up easily with Bar Keepers Friend Cleanser & Polish: 12 OZ--IF you even need to scrub hard. As others said-- soak it a while, and most of the food releases easily. We have only used Bar Keepers Friend on the pan ONCE in 2 months of 3~5 times per week usage. That one time was some seriously scorched food-- and it was still a minimal effort to get it looking like it just came out of the box. I can not recommend this pan more highly-- Especially for the price! 5FABULOUS pan!!!!! NON-stick when used PROPERLY!!!!! I was hesitant to buy this pan when I read some of the negative reviews... but after looking for 3 months for a suitable replacement 5 quart sauce pan that is a TRUE 5 quart pan, had a STAINLESS lid, AND would NOT break the bank once our stainless pan finally was busted beyond repair. I held my breath & ordered this one. Can I say we LOVE it... I mean LOVE LOVE LOVE it!!It is NON-STICK without the toxic chemicals found in teflon, ceramic, etc. AND we do NOT have to baby it to take care of it- WIN WIN!! In order to get a stainless pan to be non-stick you must use it CORRECTLY though, so don't review this pan whining that everything sticks to it when you didn't educate yourself how to use it PROPERLY.Heat the pan for 2-4 minutes over medium to high heat (it varies upon YOUR specific stove, burner size & speed, etc.), you can drop a few drops of water into the pan to test that it is heated up PROPERLY.. the water should GLIDE across the pan like an ice skater on ice.. if the water glides, then you are good to go... add a bit of oil, then your food, & it should be non-stick. There are some things that stick no matter what of if I OVERHEAT the pan, but almost everything we have cooked in this pan has NOT stuck to the pan. We LOVE it!!To clean it up, put it into the dishwasher or handwash it. If there happens to be food stuck to it or your oil gets caked on, add some hot water & a tad of dish soap, and let it soak for 15-30 minutes. It should clean up very easily after that. I have only had to use something a bit more abrasive ONCE so far (as SOS pad) & that is because it was oil that had kind of baked into the bottom in one area. With very little elbow grease, it scrubbed right out & looked brand new again.We use this pan about 4-5 days per week...sometimes 6-7.. for at least one meal though some days we use it for 2 or 3 meals. It works & works well! I would love to buy another pan down the line so we can cook even faster for our large family.Oh & this pan is a TRUE 5 1/2 quart pan, unlike our last that claimed to be 5 quarts but only held just over 4 quarts.GREAT pan!! I do RECOMMEND it!! 5Cuisinart 733-30H Saute Pan - Excellent I bought this pan in Nov. 2017 and wanted to post a review now that I have used it for a while. I enjoy cooking fried chicken with this big beautiful pan. The diameter/bottom is 11". The height is 3" from countertop to top edge of pan. The inside cooking depth/height is about 1 .5" which is up to the underside of the rivets. This sounds tiny but with an 11" diameter this is a huge area to fill up with food. I have a gas stove, largest burner creates about a 6" diameter flame. Since the pan evenly distributes the heat, I've had no problem with 'hot spots' or having to move food around to get to a hotter surface area for it to cook.- - - - -1st. Use medium setting to pre-heat pan. Test to see if pan is ready for use. Wet a spoon/whatever and put a 'small drop' of water into the pan. If it has 'boiling water' appearance, pan is ready.2nd. 'Lightly, lightly' butter/oil pan like if you're cooking eggs. If something like hamburger won't need to. For fried chicken I pour in olive oil to cover bottom surface only of pan and wait for that to heat up. I know pan is ready because I put a tiny piece of food into pan near the 'side'/not center area. Should hear sizzle sound. If not, pan is not hot enough. Let it heat up longer.3rd. Once the tiny piece of food sizzles, then put food to be cooked into the pan. Once you lay a piece of food into the pan you can't move it at all. It has to stay exactly where it is at. The food has to do a process of browning/caramelizing' on the underside before flipping or moving it. Meat will stick to the pan but will release when this process has completed.- - - - -While chicken is frying I put a large bowl of water into the microwave and heat it up. When done using pan, I wipe out the oil and then pour in the heated water. Moving it around with a spatula, I can release 99.9% of anything that has stuck to the bottom or sides of the pan. Then later or next morning, I'll pour out the water and hand wash the pan. I dry it carefully around the rivets and the lip/top area of the pan. It is said to get a shiny new pan look, clean this with 'Bar Keepers Friend'. I just bought that and haven't used it yet but with so many recommendations all should go well.- - - - -Do search on "videos how to cook with stainless steel" - there are lots of them for all kinds of food / and cleanup. It is indestructible; you can use metal spatulas and if you get stupid and allow food to stick, you can just scrape off the bottom as necessary. Such food tastes better!Cooking is very even.Rating? This is the best cookware I've ever had. Calphalon comes in at about a 3. I got really tired of having to replace my thousand dollar Calphalon set every two years. Cheap teflon pans rate at maybe 0.5.Warmup/cooldown rates are pretty slow. No worse than being stuck with an electric stove.update after 4yrs: the pan remains perfect. I really love the size, and that the bottom is absolutely flat and heats perfectly even.It's still very cool being able to fry bacon without the ends running up the sides and not fitting until it shrinks 30%. In this pan, bacon sits flat on the bottom.btw: to make perfect hash browns, keep the heat a bit lower than usual, and cover the hashbrowns for the first 8-9 minutes. After that, the steam seems to do something with the potatoes and they don't stick. Turn every 5-6 minutes with the heat high enough to brown but not blacken. 5Flaking/pitting of interior. I ordered this Cuisinart 733-30H Chef's Classic Stainless 5-1/2-Quart Saute Pan with Helper Handle and Cover to replace a smaller and, allegedly, lower quality saute pan. After it was delivered I hand washed my new pan and hung it on the pot rack that was to be its new home. When I was ready to use it for poached eggs, I placed the pan on a gas burner set to low heat (as I didn't want to risk warping or damage) after filling it halfway with water. What I initially thought was bubbles indicating that the water was beginning to simmer turned out to be 2 spots that, while small, were pits the interior finish of my new pan. I am very unsatisfied with the quality. I am returning this item and plan to avoid purchasing any more items from the Cuisinart Chef's Classic line in the future. 1Not Satisfied This pan arrived with a ding in its lid (see photo). Simple oversight, I thought. Then I noticed a peculiar ripple in the finish at the bottom of the pan. Then, after about four or five uses, it began to dimple up in the middle. In the photo I used some coffee in the bottom of the pan to illustrate. If you look closely, you can see a dry spot in the center of the pan about the size of a half dollar. I would estimate that it's humped up nearly 1/4".I cook on gas, and I have never overheated this pan. Just asked it to perform like any other pan in my kitchen. I'm really disappointed. It actually looks like a second, but wasn't sold as one. I got a good price for it, but I guess you get what you pay for. 2Go-to frying pan for large quantities - 5-1/2 qt. We got this large pan because we were tired of making meals for four, and always having the food we were cooking in our large 12" frying pan flipping out onto the stovetop while we stirred. The vertical sides also help contain the food. We've used this for a month now and love it. If you read through the instructions that come with it, you'll avoid a lot of the problems some of the other reviewers report.The large, flat, heavy aluminum-encapsulated base distributes heat evenly, even though our electric element has a hot spot. The bottom conducts heat so well, that you do have to use slightly lower heat settings than you might in order to keep food from burning on. But that doesn't slow the cooking at all. And the sung-fitting lid is perfect for covered cooking. The pan and lid handles never get too hot to hold with bare hands.Clean-up is a breeze, we just use a green Scotch pad and it comes clean with little effort. You can also wash it in the dish washer.We have had no quality issues at all, this is a great piece of kitchen equipment for a reasonable price. 5DO NOT BUY THIS. Poor quality. I bought Cuisinart pots an pans to fill in a nice small Chef set I have of another brand I have had for over 12 years. Those are still flawless but the company no longer makes them. These Cuisianart pots and pans "ALL" developed PITS in them on the inside. The outsides remained looking new. The insides of the pots started to decay. After each use they had more pits. The metal was coming off in my food!! I wasn't storing food in them. Although if they were quality you should be able to. I have owned many stainless items in my life. These were by far the worst stainless item I have ever owned. I have even claimed warranty on a piece. I emailed a picture of the bottom the had the MODEL number on it. I also described the pot perfectly in the eMail. They had all the info. I was required to send $7.00 for a warranty exchange. I received the wrong pot after all the effort it took to contact them and get the exchange. When the there pots started to pit rapidly. I decided to move on. It wasn't a bad set I got. I bought pieces from stores and different vendors online. The pots were from different batches of metal.It was just low quality that Cuisanart sourced. Good advice. Buy ALLCLAD or other good set. I found a great set on AMAZON called , "anolon nouvelle copper". It has performed well and no problems and I am using them allot. The price was great considering the quality. I have noticed many stores discontinuing caring Cuisinart pots and pans. I am sure its from the returns and problems. I still own the few pieces of the high quality set I had for years. They are like new and proof that stainless pots was once made allot better! READ THE REVIEWS BEFER BUYING STUFF. The only bad reviews on the anolon nouvelle copper I found was from people who didn't know how to cook using stainless. Or clean it. So their few reviews were not even negatives. Just uninformed. 1It warped Only have used it 2-3 times, while heating butter at a med low temp I noticed it warping, it raised up in the middle. It did not go away and is now worthless as it will not heat evenly now. I would not recommended this product at all! I should have paid attention to the negative reviews 1
