It was easy to push them out from the bottom but slightly ... Used this pan to make mini blackberry cheesecakes. It worked well for the most part. They baked perfectly. I did find it a bit awkward to remove them from the pan. It was easy to push them out from the bottom but slightly difficult to get the metal disc off of the bottom of each cheesecake. However....overall I am happy with my purchase and once I got the hang of it I made many more cheesecakes and was extremely pleased with how professional my cakes looked and the function of this pan. I did discover that the process would be less time consuming if I purchase a few more pans. So I will most likely be doing that. I hope this helps all of you cheesecake bakers out there. Happy baking! 4Money well spent I decided to splurge on two of these pans instead of just using mini cupcake pans. They are wonderful! There was no butter leakage from the cheesecake crust and they were so simple to pop out and easy to clean. I love these pans and can't wait to use them again 5Love It! Almost no leak and release perfectly. I used them yesterday and loved them. I do recommend a cookie sheet underneath, but I'm attaching a photo of the amount of grease that leaked out- and this is after putting two pans on a cookie sheet and using the pans 4 times on the same cookie sheet without washing. I'm honestly surprised at how little leaks out. For cheesecakes, letting cool in the turned off oven, then running a knife around, then refrigerating for an hour or so... They release perfectly, every time, 112 cheesecakes. 5LIKE RUST IN YOUR CHEESECAKES? BUY THESE! I bought two of these and will be returning both. I used them once and washed them thoroughly. I let them air dry and when i looked at them, they were rusted throughout. When I tried wiping away the rust, the nonstick surface came off. GROSS. Shoddy product Norpro. 2Purchased two and have been using for 1.5 years I have purchased 2 of these and love them. Been baking tons of mini cheesecakes with them and no problem with it rusting or wearing down. My only complaint is that sometimes it isn't completely nonstick and my cheesecakes stick to the sides as I am pushing it out from the bottom, leaving a non-smooth finish. So I started spraying pam cooking spray on and it helped.And also, the pieces are small so I have lost some of the bases. Replacements?? 4GREAT PAN - DOES COMPANY STANDS BEHIND IT? I read all the reviews, some said the metal comes off on the food (yes it does). From what I could see it was from the inserts). Made in China what do we expect). Other people said parts were missing on arrival (all parts arrived on my order). I didn't see missing parts as a reason for not buying the pan as hopefully the company, or Amazon, would make it right. If there were a time situation involved, yes that would probably be disconcerting. Some said the recipe on the box was delicious (I would not call that recipe delicious but using it first a smart way to test your pan so you can see how the product comes out). I added my own flavors and also used my own recipe after the first trial run. Afterwards, you'll also get to be creative and decorate the tops (adorable). One piece of advice - the recipe on the box makes a rich tasting cheesecake so you'll want to be careful about your toppings. For example, the box shows jellies on top; try it first before you decorate them all like that - egh - sickening sweet! I put just a dab of lemon curd on top then added whipped cream with fresh berries on top. They displayed nicely on a tray and the berry and whipped cream cut back the richness. In another instance, I put the plain cheesecakes on plates and spooned over a fresh raspberry sauce and topped with whipped cream. As you can tell, I am enjoying my pan. I did however, gave it a 4 rating because of the metal coming off on some of the minis and then of course, I had totoss those cheesecakes. I will be calling the company to discuss the problem. Maybe, with so many of us noticing that problem, they may be working on the problem and take care of us. I'll be revising this review to let you know the outcome once I hear back from the company. I always believe in giving companies an opportunity to rectify a problem. 4having these made up in advance makes me look good when I can produce such a lovely homemade dessert ... I use this pan all the time. I use my own recipes, and make up these mini desserts to pop in the freezer for future use. I entertain often and have people drop in; having these made up in advance makes me look good when I can produce such a lovely homemade dessert in a pinch!!! I would say buy two, as one needs to let them set several hours or overnight, and I usually have extra batter that needs to be used. I plan on purchasing an extra pan to save me time ! 5Perfect Mini Cheesecake Pan!!! Absolutely love this pan!! Perfect cheesecake bites!!! Make sure you spray with nonstick spray before adding crust and batter!! 5Yes, you do need a water bath I love this pan and am planning on getting another, but if you want tall, smooth cheesecake, you do need a water bath, at least for the recipe I normally use which is Dorie Greenspan s Tall and Fluffy Cheesecake (which I baked for 20 minutes at 325 degrees).I did two batches with the same batter, one without a water bath (on the left in the picture all sad and collapsed) and one with (on the right). They both taste great but the one on the right looks much, much better. Wrapping each cavity in aluminum foil is a pain, but worth it. Just make sure you wrap it high enough because I did not and my water bath seeped in to some of my crusts.Also make your life 100 times easier and get the Norpro pastry tapper the large end is the perfect size for getting an even crust and the small end is perfect for getting the individual cheesecakes out! I simply placed the tapper on the counter on its large end and pushed the small end through the bottom of each cavity to grab each cheesecake. Easy! Now if only they made some sort of cover so I did not have to individually wrap each cavity. It was a struggle until I realized I could hold each piece of foil in place with a rubberband.Also, FYI for the recipe I normally use (which makes a tall 9-inch cheesecake), I halved it expecting to be able to make one batch, but I ended up with enough batter for two batches (which is why I decided to try a second batch with a water bath). This is my reasoning for getting another pan that and one batch just isn t enough for my family! Even with the time to prep the water bath, this bakes up and cools so much faster than one large cheesecake.UPDATE: I found a quick and easy way to prep the pan for a water bath I use silicone cupcake liners! 4Love pan but puts off ton of smoke in oven Ive used these pans multiple times as I bought them to make cheesecakes for a baby shower last fall. I washed prior and hand dried as several reviews were about rust.. What I found to be puzzling is while baking my oven was so smoky I had to open door often to release the smoke, at first I thought I had an element going out of my oven. It produces so much smoke that I had to open my windows to let it out and smell is not nice.. I had to do several batches for shower an have 2 pans. It took several days for smoke to burn off in my oven. I even cleaned it thoroughly. I tried pans again month later an same thing happened. I kept thinking maybe after using them so much it would burn off the pans however its still happening and each time it smokes up my house an smells terribly other than this I love the pans they make great cheesecakes I do not use water bath I fill to top and bake with graham cracker crust bottom, Ive done several varieties an they freeze great. Im just concerned as to what is on the pans causing this an what is it emitting into my food? Anyone else have this trouble? I dont know what else to do but I cant keep smoking up my house and when your smoke alarms are going off and your opening the oven door every few mins to release smoke you know somethings not right but eventually it burns off and my oven is back to normal so this is why I know its the pans. 4
