Super excited thinking that these would replace my swiss diamond ...I received this pan set yesterday. Super excited thinking that these would replace my swiss diamond pans. I used the smaller pan this morning for an egg white omelet. I cooked the eggs on low heat, and the end result was horrid. The eggs were chisseled to the pan, completely NOT non stick. Maybe these missed a step in the process and they were defective, but i would not recommend these to anyone!!!!!! I took a photo because i was in such disbelief. Also, i think this is my first product review on amazon, after 1,000's of purchases. These pans are that bad. 1Buy This Pan!I would give this pan 10 stars if I could. It is everything you would want in a non stick (and nothing you don't - this is the safe for you non stick coating). Washes like a dream, cooks like a dream. I was a little worried how it would cook evenly with the extra large size to burner ratio but no issue whatsoever. AND I can put in the oven. No longer will I have to cook things in batches. This is a forever pan and I could not be happier with the purchase. HIGHLY recommend. 5Not the old Scanpan, this one rocks!OK, I bought a 12" "Scanpan 2000" several years before the turn of the century. After using it a while, I splurged for the heavy glass lid to use when needed. The pan did fine for several years, but probably about 10 years ago, the non-stick quality just didn't cut it. As a Dutch oven user, I re-seasoned the pan multiple times just as you sometimes need to do with cast iron. It still failed pretty miserably most of the time.After reading reviews on the current Scanpans, I decided to give a new pan a try. Ordered the current pan in 14", which I don't use a lot, but when needed, is great. Tried it out, and it rocked. Donated my old non-stick 14" to the church kitchen. This 14" distributed heat better, and just flat worked better.I stewed on the old pan for a while, then put it in the box the new one arrived in and sent it to the Scanpan distributor in CA with the request that it be "refurbished, repaired, or replaced." I did not have much expectation, but thought it worth a try.To my surprise, a package arrived about a month later with a brand new 12" Scanpan, which works very very well, and the old heavy glass lid still fits. What a great unanticipated surprise!If my experience proves any indication, it's that the company truly stands behind their products! 5dissapointedEverything sticks to them after 3 month of use. I never put them in the dishwasher, washed them after each use with non-abrasive sponge. AND yet their surface is looking bad and food sticks to the surface. 1The Best - but ONLY IF you take good care of itI have had my scanpan for over 2.5 years now, and it is one of my favorite possessions. That being said, if you do not plan to take good care if it, you should not buy a scanpan. My parents, for example, owned one of their own, but they ended up getting rid of it after it lost its nonstick properties due to insufficient care.Since I've owned it, my pan lost a small amount of non-stick in the first few months, and has been just as non-sticky ever since.In my experience, proper care includes (though defer to the product manual):- not overheating the pan when it has nothing in it (though when cooking with oil, you should wait to add the oil until after the pan is already hot).- never using metal utensils of any kind on the pan. Light cosmetic scratching (from, e.g. a plastic spatula) is normal and expected.- washing and cleaning the pan immediately after cooking, while it is still hot. It's okay if you don't do this every once in a while, but this seems to be very important to keeping a layer of burned-on food from developing. Additionally, the leftover heat from cooking helps with cleaning. If using a scrubbing pad, make sure it is non-abrasive.If you let the pan cool with food in it, you may need to 1. wash with soap and water 2. then reheat 3. wash with soap and water again, before it will regain its usual "clean" feel minus any patina.That being said, I absolutely love my scanpan. I am a college student and cook almost all my meals on it, so I use the pan at least once every other day. Fantastic for baking in the oven as well.The bottom line is, though I've only owned and used one of these pans (sample size = 1), my impression is that anyone who had a poor result simply didn't take proper and attentive care of their scanpan. It requires more love than a normal teflon pan, but will more than repay that care in a fantastic, evenly heated cooking surface, and a pan that will last for years. 5No rivet heads inside of panThe interior of this pan has no rivet heads to attach the handle making it even easier to clean. Potential buyers should be alert that the pan lid is sold separately. Scan Pan lid is about $29. Cook N Home lid, also sold by Amazon, is $9 and fits perfectly. I've never purchased a pan sold without the lid being included.Perhaps all fry pan product descriptions should be clearer as to whether is included or sold separately. 3No Temperature ConsistencyThe good:It's a nice sized pan that cleans up easily.The bad:There's no heatsink to speak of. The temperature of the pan fluctuates wildly, and changes the instant you add it to or remove it from heat. The lid allows greasy steam to dribble out around the edges instead of drip back inside. If you use an electric stovetop, it's miserable trying to keep it at a consistent temperature. And unlike a higher quality pan that has a heatsink, it won't continue to cook after you remove it from heat. 2Not lifetimeThis is for the 10 1/4" pan. Bought this in 2014. Thought a review was in order. To be brief, after the first year, the pan starts to develop scratches. I have only used plastic utensils and wash by hand. Have had to do a vinegar and water cleanse several times to get it clean. Never cooked on high heat and always follow instructions by the manufacturer. The surface is worn out. Very disappointing. Adding one star for service.ADDED NOTE: In July, I contacted Scanpan and after sending photos and emailing a representative, I sent in the 10 1/2" pan. Three weeks after sending in the pan I received a brand new one. I did have to pay shipping to Scanpan as stated in the service agreement but I'm pleased with the new pan. Good customer service!! 3High quality, well worth the extra cost!These pans are a little shallow compared to the other scan pans I own, but are a great value for the money. Have had scan pans for about 20 years and they are indestructible if cared for and used properly. Don't use high heat on the stove, not needed and is hard on any pan. Easily cleaned and seasoned. I tried dishwasher some but that ruins the seasoning. Hand wash, they clean up easily, and use a shot of cooking spray on the pan and it will never stick. I know these pans aren't cheap but they are so much more durable and cook better than any non stick Teflon type pan. You just end up throwing those Teflon ones away the first time they get over heated, because it ruins the non stick finish! Spend a little more and get something that will last! Still using 20 year old pans and they are still like new! 5Waste of moneyHad it for just over 2 years now. Followed cleaning instructions each time. I NEVER used metal utensils, although it says you can. Now one pan is completely NOT nonstick and the other one sticks somewhat. I didn't pay over $100 to get normal nonstick pans. In fact, normal nonstick pans have lasted longer than this pan with so-called lifetime guarantee. Complete trash. I get pissed off every morning when I have to make scrambled eggs after a failed attempt at overeasy eggs. 1
