Very useful Item!! I bought both the 10 inch and 14 inch pizza screens. I bake the pizzas on a 1/4 inch steel plate on the bottom rack with the oven set as high as it will go. The screen allows moisture to escape from the dough and removes the need for a peel to get the pizza out of the oven. I use a fork on the screen to pull the pizza and screen off the plate.Before I top the pizza on the screen I pre-bake the crust for 3 minutes on a regular pan. This way the crust does not stick to the screen or sink into the screen. You don't need to oil the screen with a pre baked crust. Another 3 minutes on the screen and steel plate in the oven does it. This time would vary with ovens and toppings.The steel plate really holds heat and is virtually indestructible but will not absorb moisture like a pizza stone. I have had great results with this method. 5Authentic Restaurant Pizza Screen This is an authentic pizza shop screen. It works exactly as expected and allows me to make professional pizza with a crisp crust using a traditional home oven. Notes: 1. Remember to season the pan before using or the pizza will stick. I brushed both sides with oil and placed in a 450 degree oven for 20 minutes. 2. For safety, use a peel or a rimless sheet pan to remove the hot pizza from the oven. I have found it efficient to use a rimless sheet pan like a peel and slide it between the pizza and the screen in the oven. As a bonus, I turn off the oven without removing the screen, thereby allowing the pan to continue seasoning and preventing burned fingers from trying to extract a hot piece of metal from a 525 degree environment. 3. To maintain the seasoning, I never wash the screen with soap. In fact, I have not yet needed to wash the screen at all, since the design precludes a build up of crumbs and I've not spilled any sauce on it. 5Crispy crusts again Got tired of the kids heating the entire house up just to cook a frozen pizza, so I've converted them to a toaster oven. First attempts making pizza directly on the toaster oven's rack resulted in some melted cheese dripping to the bottom, but using a solid-metal pan didn't get the pizza as crispy as they like.Simple solution: this pizza screen! It's large enough to hold their pizzas (California Pizza Kitchen and Tombstone, mostly) with about a half-inch to spare, yet it lets the heat of the toaster oven get to the bottom crust perfectly. I never got a chance to properly season this screen before the kids used and threw it in the dishwasher, but haven't had issues with either sticking or rusting. My one star off is because it's somewhat lightweight; I may look for a heavier-gauge screen now that I know it's a miracle pizza-baking tool! 4A must have for cooking frozen pizza. This has been a lifesaver for cooking frozen pizza. I like to cook frozen pizza directly on the oven rack for a crispy crust and I always buy thin crust pizza. All too often the pizza will begin collapsing while cooking and then little fires will occur in my oven when the greasy cheese hits the heating element at the bottom. This screen prevents that but still lets the bottom crust gets crispy. I will never be without one of these again. If you get cheese on it, it can be tricky to clean, so I just try to not get cheese on it. It isn't heavy duty, it's very thin and I might have to replace it at some point, but I've used it many times and am loving it. 5Great Pizza Screen Ordered both the 12" and the 14". We use them mostly to oven cook frozen French fries and for pizza. My husband and I do not agree on what we want on our pizza so we buy an inexpensive basic cheese pizza - fozen or premade and then each put what we want on our half. These screens really make the crust crisp up nicely (we like thin & crispy type crust - That we agree on!) The key to getting crispness on these is to preheat the oven about 15-20 degrees higher than directions call for, then lower it after putting the pizza or fries in. - TIP: you may want to put these screens in oven at about 175 degrees for about a half hour with a bit of oil rubbed on them to season them a bit so your first few uses won't result in food sticking to them. 5An essential accessory for making NY style pizza In addition to a heavy steel or stone, wooden peel, and high-protein flour, a screen like this is vital to recreating thin-crust pizzas at home. Keep it clean and this screen should last years. It's also great for re-heating individual slices of leftover pizza or other baked goods. Be careful not to let oil or cheese burn onto the screen and store it carefully to as not to let it fall or get bent. 5Great solution to the problem ailing my pizzas A friend suggested these pizza screens to me, and I liked my first one so much I got a second one! If you read the instructions and properly season the screen, the pizza doesn't stick to it, and the process of sticking the pizza into the oven and pulling it out becomes much, much easier. The hardest part is cleaning the screen. I'm not especially worried about getting every stain and crumb off of the screen, but sometimes it's hard to get some of the larger chunks (burnt on cheese, etc) out of the mesh. 4Just didn't work out for me... I don't know, I wanted to like this screen. I bought it to cook small, personal pizzas in my convection oven and it definitely gave me a crispy crust, but the edges on the screen were sharp (which just seems like it would lend to sticking more than something that was smooth? Even smoother wires or whatever seem like they would have worked better than jagged, sharp ones...) and I just couldn't keep my crusts from sticking. Sometimes I could manually pop the stuck bit of crust off through the back of the screen but sometimes it was just stuck and I'd have to soak the whole thing until the crust came off. I used non-stick spray. I tried "cleaning" it by just leaving it in the oven to cook the food off so I didn't have to wash it (as some suggested to keep things from sticking) but nothing seemed to make a difference and I finally just bought a small, plain pizza pan. So far it keeps the crust just as crispy and the pizzas don't stick to it so I'm much happier. Maybe I just got a bad screen but I wouldn't buy this kind again. 3Not just for pizza I bought this to make pizzas in my Oyama turbo oven but I didn't have very good results using it, the 10" screen is the perfect size for the Turbo Oven and I use it for a lot of other things that I make in the Turbo Oven, french fries, onion rings, tater tots, and other frozen foods do very good with this screen, but the Turbo Oven is in my opinion not very good for making pizza.I have not tried to use the screen in my regular gas oven because if I make pizza in my gas oven I always make 12" to 14" pizzas, but it would probably do a good job if I ever wanted to use it for that. 5GREAT SCREENS! I'm with the other reviewers who gave this product 5 stars. It is absolutely fantastic. With PROPERLY prepared pizza dough, dusted with white corn meal, the cooked pizza slides right off of it with absolutely no fuss. Just invest in a good pizza peel. I have read reviews complaining about how it gets badly dented after cutting a pizza on it?! A pizza wheel will dent a cast iron pizza pan. Why? Is it because the cast iron must be made in China? LOL! NO! Because a pizza wheel is made of stainless steel...which is harder than cast iron, therefore it will make an indentation where you cut. Do I really have to explain how much more damage stainless steel will do to aluminum? Its simple...slide the pizza off the screen with a peel, and cut it right there on a clean countertop. What's the problem?I ordered two of these screens, and they were carefully packed...arrived absolutely flawless.Don't use oil or cooking spray on these. They don't need it, and stuff like that only builds up on it, and will damage a pizza stone. Just buy a can of white corn meal to dust it with and you won't have any issues. The only cleanup should be with hot water (no soap), and a little scrub with a brass brush in the areas you may have dribbled a little cheese or sauce on during the prep process. Don't put this thing in the dishwasher! Heh...if you have the 16 inch pans, they won't fit anyway. Just use a little care and common sense. Its thin aluminum, people...it has fantastic qualities for cooking, as it has very little influence in the heating process that makes a great pizza, but it also needs to be treated much more carefully than steel. Its the laws of nature...and not anything to do with being "cheap". Will it leave your fingers black? I haven't seen that yet, but as a guy who regularly works with aircraft aluminum, I can tell you that if you handle THAT a lot, it leaves your fingers black...its not due to any "residue" they put on it, its just a chemical reaction with your finger oils.I hope this helps dispel some of the myths. These are GREAT pizza screens! 5
